HORSE CHEEK WITH
RED WINE
SERVES 6
• 1 kg of horse cheek
• 1 carrot
• 1 onion
• 1 celery stalk
• half a yellow bell pepper
• 1 clove of garlic
• 1 glass of red wine
• meat stock
• tomato purée
• a few bay leaves
• a sage leaf
• basil
• parsley
• rosemary
• extra virgin olive oil
• salt and pepper
Finely chop the vegetables and place them in a large saucepan with the horse cheek, wine, stock, herbs, tomato purée, oil, salt and pep- per. Leave to simmer for 2 1⁄2 hours, stirring occasionally.
L’Uccellone was the nickname of a woman who lived on the hill where the vineyards were located. Her nose looked like a bird’s beak and she always wore black, and this is how she got her nickname in the village.
