SAUSAGE RISOTTO
SERVES 4
• 350 grams of rice
• 40 grams of butter
• 250 grams of sausage
• red wine
• stock
• 1 onion
• grated cheese
Heat the butter in a pan and lightly fry the chopped onion and crumbled sausage in it. Add the rice and stir, then pour in a glass of wine and allow it to evaporate. Continue cooking the risotto, adding hot stock little by little until it is absorbed. When the risotto is ready, remove the pan from the heat, season with grated cheese and cream with fresh butter.
This is a grape that originates where the climate is cold, in the Rhine and Moselle Valleys. But the strength and elegance of Riesling perform beautifully in the Langa soils, which were once covered by the sea.
