QUAIL SALAD
SERVES 4
• 2 quails ready to be cooked
• salt
• white pepper
• thyme
• olive oil
• white wine
• vinaigrette
• quail egg
Rub the quails with salt and pepper and place a sprig of thyme in the abdominal cavity.
Heat the oil in a pan and sauté the quails on a high heat on all sides until evenly browned. Sprinkle with white wine and roast in the oven at 200°C for 20-25 minutes.
When the quails are ready, leave them to cool, then divide them into quarters and serve with the salad.
Prepare a vinaigrette (with 2 tablespoons of white wine vinegar, 1⁄2 a teaspoon of hot mu- stard, salt, a few pink peppercorns, 1 tablespo- on of chopped spring onion and 4 tablespoons of olive oil) and drizzle it over the meat and salad. Complete the dish with a fried quail egg.
